Skinny Cuban Pizza


Ingredients:
  • 2 chicken breasts (cooked ans shredded in CrockPot in favorite BBQ sauce)
  • Whole Grain refrigerated pizza dough
  • 8 oz. fresh mozzarella (sliced)
  • 1/2 red onion sliced/diced - depending on your love of red onions
  • 1/2 cup of sliced ham deli meat
  • 3 dill pickle spears (diced)
  • Crushed red pepper flakes - to tast
Directions:
  • Heat oven to 425.
  • Roll out pizza dough on pizza stone or pan that has been sprayed with cooking spray and dusted with cornmeal. Poke holes in crust using a fork to keep the crust from bubbling up. 
  • Bake crust for 5-10 min. Remove.
  • Spread shredded chicken over pizza and drizzle any remaining BBQ sauce over pizza.
  • Scatter mozzarella cheese over pizza.
  • Top with diced onions, pickles, and ham and sprinkle crushed red pepper.
  • Return pizza to oven and bake 15 min or until mozzarella is melted and slightly browned.
